Principles for Selecting a Retort

The primary selection criteria should focus on temperature control accuracy and uniformity of heat distribution. If the product has stringent temperature requirements—especially for export products, where extremely uniform heat distribution is crucial—then you should, whenever possible, opt for a fully computer-controlled retort. While computer-assisted semi-automatic retorts offer temperature and pressure control capabilities comparable to those of fully computer-controlled models, their price is only about one-third of that of fully computer-controlled units. For most applications, an electrically assisted semi-automatic retort would be a suitable choice. By contrast, manually operated retorts are more challenging to use; temperature and pressure control are entirely manual, making it difficult to achieve consistent food appearance. Moreover, these retorts tend to have higher rates of can (or bag) swelling and breakage.
If the product is packaged with gas or has strict requirements for its appearance, a fully computerized or semi-computerized controlled retort should be selected.
If the product is packaged in glass bottles or tinplate containers, since both heating and cooling rates need to be controllable, it’s best to avoid using double-layer retorts whenever possible.
If energy conservation is a priority, a double-layer retort can be selected. This type of retort features an upper chamber that serves as a hot-water tank and a lower chamber that functions as the processing tank. The hot water from the upper chamber is reused, which significantly saves steam consumption. It is particularly suitable for food production enterprises with daily output exceeding 10 tons.
If the production volume is small or there is no boiler available, you can consider using a combined electric and steam retort. The principle behind this retort is that steam is generated by electric heating in the lower tank, while sterilization takes place in the upper tank.
If the product has a high viscosity and needs to be rotated during sterilization, you should choose a rotary-type retort.
